Sourced and hand picked from a single vineyard of old vine Chenin Blanc planted on the granitic slopes of Polkadraai overlooking False Bay and battered by the South Easter.
Lightly crushed, not destemmed, gently whole bunch pressed before being racked off of only the essentials before being spontaneously fermented in neutral oak barrels without any additions of sulphur, yeast, acid, enzymes or water.
This wine is pale lemon in colour with upfront primary aromas of freshly peeled lemon, lime and Romany creams, butter and flintstone. Easily mistaken for a world class Chardonnay given away only by the pronounced floral chamomile and honey-blossom as well as that quintessentially Chennin esqe aroma of fleshy summer melon.
On the palate the wine is dry with racy mouth watering acidity complements of the cool Polkadraai terroir. Perfectly integrated alcohol with precisely defined yet not overtly pronounced flavours that follow through seamlessly from the nose. Joined by a plethora of wet clay, tart Loquat fruit, spice, nettle and that characteristic Polkadraai salinity that all end in a long stealy finish of white flowers and summer mellon.
This is an outstanding wine that can be drunk now but will continue to improve with upwards of 10 years of careful cellaring.
Serve in a Burgundy shaped glass, between 10℃ - 12℃ with delicate proteins and aromatic spices like Smoked Paprika Roasted Red Pepper Hummus or grilled fish with saffron butter.
