Illimis Chenin Blanc 2021
Illimis Chenin Blanc 2021
VINEYARD:
Situated in the cool climate region of Elgin, this vineyard was planted in 2006 on well-drained Bokkeveld shale soils. Grapes are subjected to a long, slow ripening period that contributes to the racy acidity and concentration of flavours in this wine.
VINIFICATION:
Grapes were picked by hand on 5th and 19th of March, kept in cold storage overnight and whole bunch pressed. Spontaneous fermentation in neutral oak followed by 7 months of maturation on the leese. Lightly filtered prior to bottling.
TASTING NOTES:
Subtle aromas of pear, white peaches and blossoms that develop in your glass. Tight knit wine, textured layers, green apple and saline notes on the palette. Very refined concentration and density.
2021 Illimis Wines Chenin Blanc
Upfront aromas of green apple give way to a bouquet of dried flowers, fleshy white melon, ripe peaches, and pears. With that ever-present mineral, flinty undertone so often associated with great wine
The palate is dry, nervy, and tight. Almost electric! Showcasing the exceptional vintage specificity of a Chenin Blanc grown on the cool slopes of the Elgin valley and from a notably cold vintage.
This is an exceptional wine that can be drunk now but will improve with upwards of a decade of careful cellaring.
