Illimis Pinotage 2021

TASTING NOTES:
This is a lighter style of Pinotage. Juicy plums, potpourri, sweet spice and earthy notes envelop your glass. Delicate on the palette with fine-grained tannins on the finish.

VINEYARD:
This trellised vineyard was planted in 1997 on a South facing slope in the Polkadraai Hills in Stellenbosch. Weathered granite soils with gravelly clay in the subsoil, this site produces wines with very refined tannins.

VINIFICATION:
Grapes were picked by hand on 11th February and kept in cold storage overnight. 90% whole bunch, spontaneous fermentation. Pressed after 7 days on the skins. Aged in neutral 225L barrels for 7 months. Lightly filtered prior to bottling.
