Solitary Pinot Noir MCC

Pinot Noir Brut

The Pinot Noir grapes grow on south facing slopes, in granite sand on clay. It was a hands-on process, with careful bunch selection and micro management in the vineyards. The grapes were harvested very early at low Bailing, pressed very lightly and fermented at 15 degrees Celsius in tank to preserve freshness and clean flavours. It was left on the rough lees for 8 months before bottling for the second fermentation. The wine was allowed 10 months in bottle on the lees before degorging. No sulphur was added to the wine.

On the palette mulberry and cherry characters and hints of almond with fresh mineral acid to finish.
